Safari Sunset Stew — After Sunrise in Kenya
I still taste the campfire smoke from Safari Sunrise in Kenya — tomatoes reduced to honesty, beans that simmer like patience. My porch version adds sweet potato for body and cilantro at the end because freshness is a garnish and a philosophy.
What you'll need
- 1 lb stew beef or lamb cubes, salted and seared in batches
- 1 onion, 3 garlic cloves, 1 tablespoon tomato paste, 2 cups crushed tomatoes
- 2 sweet potatoes cubed, 2 cups beef broth, 1 cup cooked beans
- Curry powder, cumin, ginger pinch; cilantro and lime to finish
How it comes together
- Sear meat; set aside. Sofrito onion and garlic; bloom tomato paste 2 minutes.
- Add tomatoes, broth, spices, sweet potato; simmer covered 90 minutes till tender.
- Return meat; fold beans; cook 20 more. Adjust salt; shower cilantro; lime at the table.
